Potato Base Pizza

Method:

  1. Boil the potatoes until they are soft and then mash them to a pulp with the butter.
  2. Sift in the flour and a little salt and pepper. Now mix to a dough.
  3. Transfer to a floured surface and knead lightly until the mixture becomes soft and elastic.
  4. Roll out to a 10 inch round. Place on oiled baking sheet.
  5. Heat the olive oil in a large frying pan and fry the onions, red pepper and garlic for 5 mins.
  6. Stir in the sweetcorn, oregano, and lemon juice and a seasoning of salt and pepper.
  7. Spread the tomato puree on the pizza base and then top with the onion mixture.
  8. Place the cheese on top and bake on a high shelf at Reg. 6 or 400F or 200C for 40 mins.

Any meat, fish or vegetables or beans may be used in the curry sauce. Or it may be used to stuff aubergines and peppers(capsicum) Serve with mango chutney, banana slices, brown rice or millet, yoghurt and mint, lime pickle and tomato slices.
